For anyone in a similar situation, I've received the approval email today (20 December) so only one working day after the one from the council.

Hi Leticia, actually you can work as soon as you are back in the UK even if you don't have your Residence Card yet, the only problem is 'proving' it and that depends on the employer. Apparently, if they are not 'satisfied' with what you provide then they can just take back any offer you receive. But...
