If you have just bank statements in joint names then show at least 4 per year, say jan, april, july, nov for one year and then feb, may, aug, dec for the next. I printed off the online application form and sent that along with the other supprting documents. The reason I couldn't use Royal Mail is because they said the package was too big/heavy and had to be sent Parcelforce. Looks like I sent it to the wrong address! Oops. Do you think I'll still be ok? My thinking is that if the FLR M is granted tomorow that its expiry will be 24 july 2019 which would be 18 days before her 60 month completion in the UK and as she can apply for ILR 28 days before her qualifying period that she would be ok? As the A2 exam is already appearing on the official home office list of approved providers and examinations, to me, it means you can start using the A2 exam even before 1st of May when it becomes the only acceptable exam.

You can book the appointment for 28 days before the 2.5 years of residence in the UK. This is permitted and will still enable her to complete the full 5 year period without the requirement for an additional visa extension. SET(M) for ILR can also be applied for 28 days before the 5 year completion....

I've spoken with UKVI again who tell me that 13th Jan will be fine as she did not spend more than 180 days out of the UK in a year so it starts from 6th June, not 11th August...

Now I'm confused! They are telling me also that it 'will probably be' 33 months that the FLR (M) is granted for as well.

The issue here is that if you apply on 13th Jan, your spouse has not spent 2.5 years in the UK yet and will have a shortfall further down the line to meet the 5 year residence.
