I got my Spouse Visa in May 2015 - and arrived in the last week of May 2015.

Hmm, that's new. Not seen that before. It used to be enough for an employee to give tax reference and that's it.

as far as I have read the whole point of an employer letter is providing details about the exact dates.

I had 110 holidays out of UK and did not submit any employer letter although did carry them

no questions were asked and ILR approved on 8th Jan 2015

I submitted copies of all pages of my passport (excluding blank ones) and they were not returned to me.

so yes copies should be submitted - if they do not require they will return it.

its not very expensive if you are going for PEO

If you see forum threads on absences people have submitted self signed letters when absences are less than 180 days in 5 years .
