I proved earnings by 4 different types of evidence;
1- payslips (I was missing 2 of the 12 required)
2- letter from employer (stating total gross paid)
3-tax returns (covering the period up to April 2006 hence the other evidence)
4- bank statements (covering relevant period)

I applied under the old rules in Dec 2003 and failed badly back then. Contrary to what has been writen above, if you have overstayed, you may indeed be refused on the basis of Rule 320.
