If possible can you wait until the new job has issued you a contract and you have signed it and can include it with the application? Also your covering letter can have an explanation with both phone numbers of both employers. We had a job change scenario in our application and included both contract...

..We paid for the premium same day service but they had trouble with their computer systems and there were around 80-100 people who were sent away. They took a phone number and said they would ring today but they didn't, we waited with the phones all day. There is no number to contact. Wow. Amazing...
