You need not be employed ALL the time on Tier-1..However you need to employed AT THE TIME of applying for ILR.

I think you are fine for extension(as long as you have got points section covered).
But you might/will face issue while applying for ILR as you are away from UK for more then 3 months at a stretch.

You can come at ANY time to UK .(Evn on your last day of Visa ).However if you need to extedn your visa,then you need to make sure that for last 12 months u r working and able to qualify for extenstion etc.. But ,there is no time restriction on your travel..You can come and leave UK any time u want ...
