It can take sometime - especially if they think there is a reasonable chance of appeal.
You could send an email to them via the webpage requesting an update in respect of the documents.

Check the email address provided on the online visa form - UKVI tend to send an email advising what to do

i.e. repay immigration health charge, go and drop off the passport at VAC and them email them confirming this has been done.

The evidence should cover the full period - not just the last 6 months. So call records, messaging etc. for the full period. Photographs of time spent together, functions attended.
