Hi,

Yes you will need visa to go france or any european country, you only dont need a visa if you have a british passport.

The idea is to prove that the two of you were indeed living together at a particular address at a particular point in time. Do look at the whole list of possibilities mentioned on the SET(M) form. As long as the documents are spread out in time over the two year period, yes, fine. The application can be made no earlier than 28 days before the expiry of the current 2-year spouse visa, and no later of course than the actual expiry date.
