Thanks for the answer, and yes we probably are overthinking a little.

If I may be excused for asking a potentially silly question, if we end up having to book an appointment in July and the visa will have expired on the 30th of May, then what?

We've just spoken to a solicitor, and he suggested that if we choose to withdraw the application they will very likely cancel my wife's existing visa and put her onto LLR. We're a bit dubious about this, but also somewhat scared as we've received so many conflictin...

I can't speak highly enough of the staff in that centre - it's been nearly 2.5 years since they handled my wife's visa application but honestly, they were great.
