If you entered UK illegally or overstayed in UK in the last 10 years prior to making a Naturalisation application, then you will have to wait 10 years from the date you were granted a legal status to stay in UK. All you need to list is employment in UK for the last 10 years (if any). Dont you remember where you have worked in the last 10 years? Dates can be estimates or you can leave it blank. Forget about the mandatory section. Just upload documents in the optional categories. This is how the website is designed.
You do not need relationship documents for SET(LR).

You can not rely on your degree to fulfil the English requirements without NARIC etc. You will need to select NO for English degree. 1) Assuming your wife got her ILR via the Tier 2G route and not Long Residence, you will apply on SET(O).

Assuming you got your ILR via the Tier 1 Ent route, you can apply for your son using Form SET(O). Once you start the form choose the correct category as “Child below 18” and proceed.

As long the child is not leading an independent life, child 18+ can simply extend the PBS dep visa after 2023 if need be. Use Royal Mail Special Delivery. Use a hard “no-fold envelope.” HMPO does not deal with in person walk-in postal service for first adult passports. You may call the HMPO helpline and confirm though or just check with HMPO in person first if you live close.
