Those 12 months should fall inthe 15 month period, i believe. Also the maintenance claim should be within the 12 month period. If I include N/A, will it suffice the problem.

Where to mention the child's immigration status?
i) Can i mention it in the primary applicants cover letter? OR
DO i need to keep a separate letter for the new born child?

The aim of showing the funds is to ensure that you can support yourself whilst in the UK without the access to Public Funds. If you satisfy that to the EC officer that would be sufficient.

You just wait for your employer to process your WP. once you get the WP approved from Biritsh embassy, then come to the UK with your employer WP. Go to google and do a research. Find the companies and the skill sets those are matching. Then apply for jobs.
its better to be in person in the UK before applying for Jobs. Most employers require that you have to be in person before putting the application.
