We used Whatsapp for calls etc, it should hold more call info than 1 month as I pulled a selection of calls over a 7.5 months period. Go into Whatapps and screenshot the info with calls to your wife which show her name( first name seems ok for HO), date, time and length of calls, screenshot a couple...

It is pretty normal not to receive confirmation of delivery of documents.
Your Royal Mail tracking is proof of delivery, keep the number safe.

If there are any problems with the HO saying they have not got the documents then give them the tracking number, they can then usually find them them

We applied on the 28th of March and the visa centre in Moscow gave great advice on how to package the doc to make it easy for ECO, there did not seem to be any issues :) Just make sure where you address it to Sheffield you put the GW number, if its priority and what visa application centre you used ...
