Not to be nitpicky, but presumably the letter re English language instruction indicates degree conferral to you on the relevant date? And the letter from the UK employer indicates not just the annual (or annualised) salary rate but the actual salary paid to you in the relevant period? A covering le...

Since you have 2 documents that corroborate each other from your Australian employer (the payslips and your bank statements), I would omit the letter. With that last amount not matching, it may hurt more than it helps. But since it sounds like your letter from your UK employer matches your payslips...

I have a question in relation to all this.

If my tax return only covers a certain period (eg. 9 of the 12 months), should I only send in bank statements for the missing 3 months? I ask this because I have bank statements covering the whole 12 months...would it hurt to send them all in?

I personally don't understand why they ask for the tax document, but feel free to tell me I'm wrong. As long as the 12 month period falls within the 15 month window and is continuous, there should not be a problem. I am a bit concerned by what you mean as 'continuous'.
