I think you are supposed to be resident in New Zealand when applying for the Irish working holiday visa (Australians differ), but I've heard of people sending passports home and using an NZ address (this was the case when I was applying at least). Just keep this in mind.

Non-EU nationals have to register if staying in Ireland for more than 3 months. The number given would be your GNIB number just to help the GNIB find your record when you go into register.

If you are not in ireland then you cannot provide an immigration stamp. I just provided a stamp showing that I'd used my passport (can see the number) to enter the schengen zone.
