Thank you all for your advise!

I will have my Masters evaluated by NARIC and apply again. Even though it will cost me another 800 USD for the application fee, I believe that is the best option since it will be hard, if not impossible, to have them reverse their decision.

I just sent an e-mail to the lawyer who submitted my application, along with some of your comments and the link to this thread.

I certainly hope she can help get this resolved in my favor.

I believe Australia and New Zealand have stricter age rules than the UK. This could have something to do with the greater influx of immigrants into UK as compared to Australia and/or New Zealand.
