It might not be the ideal scenario but you can start the course days or even weeks after the official start date, that's not an issue.

Since the employer is offering you these options, the lenght of the visa seems to be a personal decision, including your payment capacity. I wouldn't do the maths in that way. The fees are not the same, actually there is a considerable difference between them Home Office immigration and nationality fees

Also you would need to pay IHS accordingly, it is paid depending on the length of the visa you're applying for.

You also can keep informed your sponsor about the current status of the application, they should be able to provide some advise for your comfort.

If you check other posts out along the forum, you will notice that these delays are a general issue at the moment, it's not related to a specific case.

Depending on the airline sometimes this service is free of charge. So staff at the airport can help them going through passport control, baggage claim, etc.
