You can, paying online is optional and cheques are accepted. The list of documents and the address to send them to is in the letter.

Five days is a plenty of time to send a cheque. What's the problem with that? Send a cheque and go away. The certificate will arrive when you're back.

They make check or they may not check the absences. Regardless of their approach, full record of your arrivals and departures from Ireland can be retrieved if it becomes necessary in the future. Just got an email invitation to the virtual ceremony for the 13 of December at 19:00.
Application was approved in January, I thought I will not get the invitation, but turned out it will be sent eventually.

Same in Ireland, if you have already spend a maximum of 90 days on a short-stay visa, you are running a risk of being flagged and refused the entry. Short stay visas cannot be used for prolonged residence in the State.

Ask Irish embassy to give your husband a visa with longer validity. My sister got a two-year multiple entry tourist visa after getting two single ones. No. Just fill it in normally and give details of all absences on a separate Word or Excel spreadsheet: dates of each trip, duration and reason. Calculator is very useful to establish if you have enough residence after deducting absences and to know how many days you must accumulate before applying.

Easiest way to check is to use the residency calculator tool. Enter all your permission stamps as per your registration except for years when you were away for more than 6 weeks. There must a reason why you're getting permissions only for one year each time. Maybe you spend too much time outside of Ireland and they see it. I had a permission just for 7 months because my passport was expiring. Next time I was given permission for 5 years. Just ask to give you a longer permiss...
