1. First surrender their Indian passports
2. Apply for Evisa which will be quicker and will get within 24 hours
3. Apply for RC before you go to Inida
3. After back from holiday , you can apply for OCI

1. You need your Indian passport to apply for your British passport to prove your identity
2. You need British passport to surrender your Indian passport and apply for RC
3. You can get EVisa and travel to India while your surrender and RC is in process.

You can apply for tourist visa where your kids can stay upto 6 months, meantime you can sort to OCI as well

You need to carry self attested photo copies and original for verification.
You need to upload parents passport as well. Not sure what do you mean by "Previous Indian passport"
You need to upload Registration certificate, birth certificate of your kids

You need to renounce your india citizen first. I hope you can do with your surrender certificate.
After Renunciation you can apply for OCI.
