I think if they are online payslips they must be stamped and signed by the employer.

In my opinion you do not need any proof of your employment or letter for employer for a dependant visa. All you need is to be able to show enough bank balance as mentioned in the guidance.

It does not matter what your status in any of the countries outside UK was. The only thing that matters is that you were not in the UK for all these holidays abroad and that is what is meant by "absence".
