Also, to be clear, the issue is not at all the 90/180 rule since my wife has not been in the schengen zone for 180 days. The issue is that she has a multi entry schengen visa expiring in December, which only has 10 days of stay in the schengen zone left, but we would like to stay longer than 10 day...

Hi,

The 90/180 days limit does not apply to your spouse if she is in Schengen zone but outside Germany.

She has unlimited stay in Schengen zone except Germany. Even with expired visa she can stay 3 months with you in "each" Schengen country without applying for EU-Residence card.

Holders of Stamp 4EUFam can travel without a visa to all EU countries and unaccompanied by the EU family.

Except Switzerland (Residence cards for EU family members issued by Ireland and Cyprus are not valid there).

You can apply for stamp 4 on the route i suggested. You are already on the Island of Ireland (IE + NI), UK and Ireland also have CTA + you have visa waiver. Update them if you change addresses and make sure when your EU sponsor change jobs before your final approval, send the payslips and work contract to the EUTR unit via email. If they don't acknowledge the email, send via registered post and keep your post reference as evidence.
