AIUI - unmarried partners don't qualify for the 3 year path.

So you either wait until your married - or apply now if you meet all the other requirements under the 5 year path.

You can make a SAR (Subject Access Request) instead - plenty of information around on the forum if you have a search. Should reveal it if they've kept it.

Tax paid is easy. Self assessment + statement of account from HMRC. However, income for a rental requires a rental agreement or contract - so I suspect you may have supply each and every booking from airbnb since it isn't a single contract. Unless it's really necessary to change job - I'd stay put. You're only likely to cause more confusion by switching.

The rules say it's your position at point of application that matters but I don't think I'd want to take that chance on a phone call to the old employer.

Yes - but it's highly likely to be refused. You've declared an intention to settle in the UK via the spouse visa. A visit visa after will look like an attempt to bypass the spouse visa.

She'll only be subject to a ban if she does overstay after the rejection. If she leaves the country within 28 days after the rejection - she'll be fine.

It's also worth noting that an application on the fiancee or spouse route (once you meet the financial qualifications) isn't subject to those bans.

You can vary it - but without children (as Casa said earlier) - the FLR(FP) application is more than likely going to be rejected too.
