How much is enough for self sufficiency?

Hi All, I'm planning to apply for EEA2 base on self sufficiency route. How much money must i have in my account that would be sufficient to qualify under self sufficiency? I also received my invite.. however, i am away from Ireland at the moment and won't be returning until 12 Jan. As the deadline for the return of the form confirming my availability is 6 Jan can i ask somebody to sign(my name in a legible manner) on my behalf or ask a solicitor to do so on my behalf....

she agreed i should send/address the application directly to her and that she'll help monitor it that nothing goes wrong this time.. i don't think there is anything like fast tracking.. but she assured that the processing time has been considerably reduced and wouldn't have to wait for too long
