You need to "book" an appointment in 15 days (for any date that may be available and is convenient for you) not (necessarily) "attend" an appointment in those 15 days. You will probably have to get someone to keep an eye on the post, that would be the best option till you return...

Most people probably track it through Royal Mail. Suggest you contact NCS as they should have given you something, a paper with it written on or a receipt. You don't need photocopies. NCS copy all your originals themselves.

You don't need payslips, but take P60s in case they ask for them (I was asked for latest one I had back in 2012 when I applied)
