Hi Mate.

You need to carry all the P60 and HMRC documents with you if you are applying via NCS its upto them if they want to take the copies and add to application.
If you are applying via post then do include all the tax papers.

You need to speak to very big lawyer and an accountant at the same time.
You dug a big hole yourself and now thinking to jump over.

I was self employed for some period ... But didn't use the earning for visa. It was way back in 2011. I was doing personal work and my job.
