My apologies. It appears some information had been left out. I now know that the ECO rejected sponsors evidence because he states he is required to consider lowest income for said period (is this true?). Even if you kept it in joint names, it would still not make any difference as long as there is sufficient room and that you yourself are not now claiming any benefits and that wit your salary you can support your wife.
