Wow thats a lot of documents.... Probably too many! I think its better to have more than necessary but I would try filter it down a bit. What you really need is just 3-6 months bank statements and wage slips, you don't need them dating back to 2009. Then try to pick out some joint letters or address...

Did your wife get a national insurance card and any correspondance from them? Check the set(m) form, hospital/docs letters are OK, does she have any of those? It tells you on page 15 of the form. Yep Betty anytime between 14th march 2011 - date of expiry (which I assume is July 10th) is fine. But personally I wouldn't leave it as late as expiry! Good luck with your application
