The is no requirement, legal or otherwise, for a spouse to be a dependent visa holder. They can hold their own visa. If you submit an application on the last day you can continue to work for your current sponsor. You cannot start working for your new sponsor until your application has been approved, regardless of whether you apply in time or not.
