If you meet the requirements for an ancestry visa there's nothing to stop you returning to Australia and applying for one. Technically you wouldn't be switching categories, you'd be leaving the UK and applying for a new visa.

She'll need a child student visa (Tier 4 child). Only partners, children and adult dependent relatives are considered as dependents. She'll need to meet the maintenance requirements.

Personally I would not bother including testimonial letters from family and friends as they are quite easy to bad quality and therefore likely to be ignored by UKBA.
