CW wouldn't refuse you even if you submit the payslips with mismatching dates but they might call your token number and ask for more details on that (assuming that you go for same day appointment). Now a days its very easy to get appointments, you can even get the date just 2 days before. Normally the dates are released 42 days prior to each date.

I still haven't applied yet but gonna attend peo in a week's time. I also learned that my wife needs PBS depdendent visa rather than FLR(M) (cos' FLR(M) will reset her stay to 0) So Iam hoping to get a 3 years extension for her now and then another 1 more before she qualifies for ILR.
