Really sorry to hear about this. Take a copy of the tracking page and write in a cover letter that you applied on 01/05/2018, as the date of the application is the date you send it with Royal Mail. Also explain what happened with your employer and that your application was never rejected as invalid....

Did HO not write to you asking for you to pay using a different method? They sometimes do this before rejecting an application as invalid.
