No you can add kids in flr m of your dependent.thpats why in payment page they say how many dependents you have to add them and then write the total amount with dependent plus kids

Her visa remain valid but she has to change to flr either way

Yes if she pass b1 orGESE level 5 then she can use this for both applications even if it's expire
