My sister is going to be submitting her spouse visa application for her husband, but her income is low so my cousin is sponsoring her as well. Her income from employment is £1,080 per month with my cousin sponsoring her 500 pound on top of that every month is this allowed?

Needs to have earned the equivalent of £18,600 pa over the last three months and third-party support is not allowed. Based on what you've posted the application will be denied.

I think, it has to be 6 months and has to be the same employer. If not the same employer for the past 6 months then more documents needed.
