Assuming that the dates you gave above are for your initial leave under T2, your stay is limited to 6 years, so there is not much point applying for longer than 3 years even if you could stay a few days or may be weeks longer than 3 years because the fee would be significantly more. Also, you shouldn't apply for a period longer than the work end date in your new CoS. Note that you will be able to apply for ILR after 5 years in the UK if you meet the various requirements
