Hi all,

Can you hire a full time EU student as a full time employee for you ltd company, 30hrs per week?
Can you claim that student was working for you in evenings and week ends?

1) It depends on the student's immigration status/any visa status & also on any conditions attached.

2) "Claim..." to whom & for what purpose?

In dealings with government agencies and officials (in fact almost anyone) it is surely preferable (& expected) that one is transparent & honest & represents facts truthfully.

Taking any other path will surely result in consequences for either or both parties sooner or later.

It is impossible to be a full time student and work full time, even for an EU student. Evening and weekend work is part time work.

And as noajthan has said, best to abide by the guidance/rules of your visa than try to make up something that suits your circumstances.
