In joint names we have:
tenancy agreements
HMRC Tax credits letter for all 5 years in both names as a couple
marriage certificate
letters from letting agencies
a few bills
etc

I am sending only originals but yes I have copied all the most important documents apart from bank statements which I can always print again. Not sure what you mean by scanned? I did not need to scan anything
