My extension 50K (PSW) thourgh third-party sponsor is due in this week. Is it necessary for me to mention or not the name of third party fund provider in my cover letter.

You can but not needed really, as I think all they want to see here is 'have you invested the required money via required way for running the genuine business?' ...there is no harm to mention.
