Absence Letter Addressed to whom

My ex employer wants to know whom specifically should the absence letter be addressed to.

Currently have:

UK Border Agency
UK

I want to apply at a premium service centre but don't know which one at this time

When do you plan applying?? The system and service has changed very recently.
