My tier1 issue on 10/2013, applied extension on 10/2016 and successfully on 18/12/2017
My five year was comeptely on 2018/10 but we decide to apply this month because of my husband’s 5 year complete on this month
I have one employee work for me from 01/08/2015 until 01/08/2018 and another one employee take his position work until now you can count this employment only after 18th Dec 2017 so you still have 12 months or 52 weeks from 18th Dec 2017 - 17th Dec 2018
Mybanother emoloye work for me from 01/01/2018 until 31/12/2018 for one year 12 months ok or 52 weeks
If I apply on 01/2019, can my job creation meet the requirement

Having said that, you have 2 FT jobs for 12 months each anyways (even if you did not have this all you need is 104 weeks of FT employment in any combination)
You are good to go just provide FPS from Dec 2017 - Dec 2018 but note you can only claim employment after 18th Dec 2017.
