Haya, I am applying for irish citizenship. I am volunteer with a local kung fu club i manage kids there. Do you recommend I submit a letter from the club to show I am involved in community? The club asking what to include in letter. Do you have ideas?

There’s no such requirement in the citizenship application. Who asked you to submit that?
If you just want to show your commitment to the society, tax letters P60/P21 mean much more to the government :)

If that’s the purpose, by all means do it. Get some people in your community to sign the letter for you.
