Once you have completed 12 months on ILR - if married to a BC you could have applied straight after getting ILR.

Just give the full names as they are known officially / shown in their/your passport - you don't need to provide additional documents showing your parents' names. I'm a Non EEA citizen with ILR. In thee AN form, there is a section for entering the parents name. My current passport had both parents' given names but no surnames! It's been like that since my first passport many years ago and continued through renewals.
Will this cause any problems with my naturalization application?
Should I fill only the given names (as in my current passport) in the AN form or should I give full names including surnames?
Would I need to submit any additional documentation if I enter the full names?

You are overthinking this process. Your British passport and naturalisation cert will be issued in the name of YOUR passport. I was a bit concerned because my dad's & mom's surnames are different and my surname is yet another one. Typical for Asian countries but would appear strange in the West. To make matters worse my parents don't have passports and I don't have any official documentation with their full names. It'd be curious when I apply for my British passport and if they will just allow the full names of my parents without any proof.

No you can't. The appointment booking is part of the process at the end of the application.
Unemployment is not an issue for naturalisation - this is all about residency - you will need to list your self-employment and need to provide the appropriate documents (i.e. tax returns). Outstanding taxes are not an issue as long as you comply with all arrangements, such as payment plans.
