I am not a great believer in this letter.- a letter from my childrens' school stating that I reside at my home address in the UK and that my children have been attending this school since 2013

The UK do not impose systematic exit controls on departing passengers. You were not "stamped out" because it is currently deemed an unnecessary use of resources.
