Hi I did not use the self scan option but can share my experience with the checklist. My sponsor scanned all the documents including the checklist at one of the UK centres. But nobody signed it before scanning which we found a bit odd.
However, I had to take the document checklist to my biometrics appointment as well (mandatory). The VFS official then signed and scanned it through her system to be forwarded to the ECO.
So my understanding is that the checklist is left to be scanned by the VFS official at the biometrics appointment.

To be honest it is not very clear on the email.
These are what I took to the appointment:
1. Valid passport as well as photocopy of the bio data page
2. Any expired passport/s if relying on them to show travel history (I personally recommend taking them anyway just in case)
3. VFS appointment confirmation receipt (the document with the barcode)
4. Document checklist
I also took a copy of my sponsor's passport bio data page and the IHS payment confirmation email. They did not check these two although I read somewhere that it was required for the appointment.
That was pretty much it. Good luck!
