Furthermore I've read that she will have to demonstrate an improved English ability? Next requirement as stated by Korekt is the A2 English test. However if pass the B1 test, this saves you time and cost down the line towards ILR.

Besides utility bills any correspondence exchanged either in joint or individual names can be utilized.
Thanks for your response, the only issue is that we don't have constant correspondence since 2018 when she moved in. So far we've got:
In line with her expiry date - June 2021 the relevant period will be June 2019 - June 2021

Can I ask how much flexibility is there with this request? Can we print out historic statements if we haven't received them in the past? If we don't have the full period from 3 separate sources will the application be outright rejected?
Yes but date of its issuance/printing/downloading won't be changed retrospectively
It will entirely depends on individual caseworker. But as per your previous post you actually have evidences from 3 sources.
