You will need much more considerable documents for the self employed aspect of your income.

you will need unaudited accounts. These will need to be done by an approved accountant and will cost about £470 or so to prepare, but you can then put them down as a tax deductible expense.
You can of course only get those done when you have completed a year of trading.

I think the rules say you must be able to show one year's trading at least, but someone else maybe able to tell you if you can have interim unaudited accounts done to add to your 6 months pay slips to demonstrate the required annual income of £18.6K assuming no kids involved. You need to show bank account details too.

Best quick fix will be if you start undertaking extra work (overtime) at your payee job, and make an effort to always earn at least £1550 per month.

No need to wait for another 6 months rather whenever you will reach to that climax, where you would have earned at least £9300 during the last 6 months, then you can apply.

Also, if you have 6 months older cash savings then don't keep these idle rather can combine it with your paye job to cover the shortfall.

Better idea and would work seamlessly, if both jobs would have been matured for at least 6 months on the date of application. In that case, don't even divulge anything about your self employment.

A paye income of £9300 while remaining with same employer/employers from at least 6 months can easily fulfil the financial requirement under category A.

If you are the only occupant at a property rented from a private landlord then a tenancy agreement, noc letter and a council tax bill (optional) should be suffice.

Need to know if possible to include my son under category A if my payment is up to £11,500 under 7months while still working with the same company.

Yes because with extra dependant it will rise to £
11200 (£22400) from £
9300 (£18600).

The employer letter must contain the key information about the employment such as title, commencement date, type of contract, overtime, annual income etc.
