LOL those are my EXACT same circumstances.
When I first submitted application on 1st Feb I didn't provide any documents as I have pre-settled status already.
Having Pre-Settled status is not a sufficient condition to grant you Settled Status. Besides still residing in the UK, If the relationship with your EU sponsor breaks down before you get Settled Status, you are not eligible for it, hence why they need proof.
HO called and asked me to provide evidence to show that my relationship is still on-going. The caseworker mentioned anything like renting contract/combined bank statement/letters will do. I provided bank statement and letters (covering past 6 month) to show that we are living in the same address.
As I said, I am also an unmarried partner, and I applied exactly the same day as you. I supplied copy of the two EEA RCs I've held, our latest Council Tax, and the most recent joint bank statement, upfront, at the time of application. I was granted Settled Status within 1.5 months, on March 15th, no further documents asked.
I'm afraid from what you describe it seems that by not providing recent proof of your relationship upfront you just went to the back of the queue again after the caseworker first reviewed your application, because it needs a second review (but this is me just wild guessing). This would mean an additional 1.5 months until your documents are reviewed. If that's the case, should not be too long now, considering there is a buildup of applications since then, so waiting times have likely increased from 1.5 to 2-ish months.
