Supplying documents for a severely disabled person

Hi everyone
I am hoping someone knows the best way to approach this. A lot seems to have changed since we applied for my wife's first spouse visa 2.5 years ago. Last time we posted her documents, now it seems you have to present them at an appointment. My problem is my wife is severely disabled and completely bedbound. She also is in a high risk covid bracket so taking her out the house is impossible. When we did her application last time, the HO sent people to the house to do her biometrics, but this was after her application was processed. Is the only way to submit documents through this appointment process? Thanks in advance.
