I am looking to sponsor my father in law to visit us next month on a visit visa. Would I be able to to do this whilst my wife spouse visa extension is in process please?

Noting that though you are the sponsor however his daughter is in UK, this will have to be addressed.
The requirement is for her to have legal stay so having an application pending she is covered by section 3C and therefore hopefully not an issue to mention it.
