As many as you can.The older the better. You want to show that your relationship is genuine and subsisting right?

Further to @Tictack reply, note that a general sample of ongoing communication I.e. 2-3 per week/month screenshots depending on how old is OK. Don't dump hundreds of pages on CW.

Invitations?
There is no template neither is there a requirement for it.
Simple letter talking or outlining your relationship and how you meet requirement should suffice.

What was your length or period of overstay? How were you sustaining yourself while an overstayer?

Haven left voluntarily and with a repayment plan in place for the NHS debt you may expect a favourable consideration.
There are those with similar circumstances and who got back into UK on basis of spouse visa and declaring it in application.

Well, the one thing you have going for you right now is that you departed the UK and you're planning to enter the right way.

No one here can tell you if your application would be smooth. Mostly it could get escalated to a ECM for further ratification.

Go on with the application, in cover letter declare over stay, penitence and not using public fund, not worked illegally etc.

Candidly the final decision lies with you.
