Work experience confirmation by Visa officer?

My application for FSW is being processed by CHC London and i have been asked to submit documents for processing. Does anybody know any of the following;

1-Does the visa officer contact employers for confirmation of work experience shown (as in Tier 1 UK)? (my work experience goes back to 2000 and guess by now most of the ppl i worked with must have left)
2-The only thing i have to prove work experience is contract letters covering all period + payslips (not all just a few here and there) + experience letter by employer with role description.
Is that sufficient? How important are the payslips?

Any help would be great.
