Full time job + part time work

I am an IT professional and have a full time work. However, on the weekends I do some extra work, at times, for others. The money comes into my bank account. Would proof would I have to show for that? Its sort of consultancy work so there's no pay slip. I can show my bank account and a letter signed by the one who paid me? Would that do?

Also, I am in United Arab Emirates (UAE) and extra work on weekends or free consultancy is not very common. Would that raise doubts in HO minds?

No. The policy guidance clearly explains the combination(s) of documentary evidences needed when applicant is self-employed (in addition to being employed or otherwise).
